Although not ideal curious if they could run 280 discs instead?

I have a set kicking around in the garage but no way 300mm+ disc will go under 15's.

If you have good wheels you can get 305mm!
    F3 use 13" with 272 mm

These are radial mount and the pad arc would most likely be covered, it just means the body is away from the disc, onnly an issue if it is the other way around as you hit the body without the pad area covering the full surface area

Possibly, reckon it'll be a tight squeeze! I need to try mock mount them and see whats what.

Does anyone have any recommendations for who to approach for adapters?

Sorry I am the other side of the world, most radial mounts for the same brand will be a similer spacing
Wheel selection like the Team Dynamics 1.2 will give at least 15mm more clearance (=30mm more diameter).
Also thinner disc often has more room because of the strengthening ridges in the wheel
