So is a golf/leon/a3 best then? Just looking for the most cost effective way and easiest way too do it.
Yep, they`d be your best bets, since they have the engine mounted transversely, like your Mk2. The problem with Passats and A4s is the engine is longitudinally mounted, so the manifolds, turbo, gearbox, etc are useless to you, and you`d need to source Mk4/Leon/A3 parts to convert anyway.

Anything is possible if you have the skill and time. Theres a thread on here with someone has done what you're saying with aircon also.
You don`t have to use the dash though. Get the ECU defeated, and you can keep all your standard dash/clocks.
