Depends what type of protection you want...if you're doing road rallies on mostly smooth stuff you basically want a skid plate, so things slide off rather than sticking in the sump, or ripping your front pipe off....you can make one yourself...road works signs are about the right thickness ;) This assumes you're doing events that are mostly smooth, and you can afford to slow down a bit if you see the rough stuff coming.

Cushioned mountings are a good idea...

If you need it for the really rough stuff - stage events or ploughed fields on autocrosses, go for a ready made one from a specialist rally prep shop. Needs to be at least quarter inch alloy, maybe more. Make sure it's got clearance between the guard and the sump, and preferably some rubber mountings at the back (cotton reel exhaust mountings are an option) Check to see how long it is too.

You'll also need to make up skid plates for the exhaust, pipework, suspension mountings, cables, etc, etc. Look under the car and imagine what you could knock off with a lump hammer.

You'll probably find your engine will run hotter too, with either version...consider a bigger oil cooler / rad

I think vw used to make one for the mk2 golf country. Might still be available.
There was one on the pvw classifieds a while back.
