Genuine (non-G60) front wings - I can't believe they haven't cranked up the original tooling for these somewhere.

Agree, IMO there are loads of parts that could/should be put into production, there has been some good progress made and some genuine parts remade, all be it in limited numbers (which is undestandable in a commercial sense where demand is limited i suppose)
Good quality genuine VW parts would be welcome rather than some of the aftermarket parts (although the choice of having lower cost but decent quality aftermarket parts is also welcome, especially where genuine parts are NLA). Things like genuine chassis/body repair panels, jacking points, sills ect are going to be in demand as most of these mk1/mk2 golf era cars will be in need of these around now.
The thing that not many people will be aware of is that the mk2 Jetta is still in production in China (or was a few years ago) and that it is/was the most popular taxi sold in China, so there must be thousands of these and tooling for things like the rain gutters and window rubbers, repair panels ect must still be in action somewhere. The quality might not be the same as VW Germany but it could be worth a look.

Seeing as the postage would be a nightmare for such a delicate item, even an aftermarket, well fitting, blank, hard shell that can be upholstered by the buyer would be an option? Fiberglass or plastic of some sort?

I made one out of fiberglass for my MK2, however, I never could get enough confirmed interest to spend the time and money on a mould and the original material is nla so it remained a one off

The design above was also found on early Passats.

Would definitely be up for buying one of these.

    Cheers.
